"My IMAP backup strategy (necessary because my work place does not provide infinite online storage) is to create a folder 'on my Mac' for archiving emails. I name it appropriately, usually with a mailbox name and date range. Note, you can also make sub-folders for more organization. Then I create a smart folder to separately capture mail from my In and Sent mailboxes that are older than a certain date (which will depend on your email volume and the storage generosity, or lack thereof, of your provider).: Every once in a while (generally when prompted that I am reaching my storage limit) I will select all of the older messages in the smart folder and select the 'move' option, rather than copy, from the menu or via a right-click and put them all in the archival folder on my Mac. All attachments come along for the ride and the folder is fully searchable form within Mail or via Spotlight. The disadvantage is that since the messages are moved off the server, I can't search them from another computer. Of course, the archived messages are also backed up by TimeMachine."
