I assumed it was the update to iTunes 11.x so I rolled back to iTunes 10.7 - no luck with that. The strange thing is I can stream to the Airport Express using RaopX or Airfoil. It's just iTunes that will not connect. [...] Answering my own question: It's an IPv6 problem. Disabling that fixes the problem. I used networksetup -setv6off Wi-Fi in Terminal.
